Ingredients

  • 3 c. light brown sugar
  • 1 c. water
  • 1 Tbsp. vinegar
  • 2 stiffly beaten egg whites
  • 1 tsp. vanilla

Method

  • Heat brown sugar, water and vinegar gradually to a boiling point.
  • Only stir until sugar is dissolved.
  • Boil, without stirring, until mixture forms a hard ball when tested in cold water.
  • Remove from heat and when syrup stops boiling, pour slowly into the egg whites.
  • Add vanilla and beat until it stands up in little peaks when dropped on a buttered dish.
