Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup shortening
  • 1 1/4 cups buttermilk
  • 1 egg, beaten
  • 2 teaspoons maple syrup

Method

  • Combine flour, cream of tartar, soda, and salt; stir well. Cut in shortening until mixture resembles coarse meal.
  • Combine buttermilk, egg, and syrup; stir into flour mixture just until dry ingredients are moistened.
  • Turn dough out onto a lightly floured surface. Divide dough into 8 equal portions, shaping each into a smooth ball. Press down with fingertips to 1/2-inch thickness. Cut into 4 equal pie-shaped pieces. Prick each with the tines of a fork. Place on greased and floured baking sheets. Bake at 400° for 10 to 12 minutes.
