Ingredients
- 1 1/2 lb. ground beef
- 1 tsp. bacon fat
- 1/4 c. flour
- 1 1/2 onions, chopped
- 1 1/2 tsp. powdered comino seed
- 1 1/2 oz. chili powder
- 1 tsp. oregano
- 1 1/2 tsp. salt
- bowl of Fritos or tortillas
- 1 lb. Cheddar cheese
Method
- Saute the meat in just enough fat to cover the bottom of the skillet.
- When meat is browned, add the rest of the fat and the flour.
- Add heated consomme, stirring.
- Simmer for 30 minutes, stirring frequently.
- Increase heat and stir continually until mixture thickens.
- Place mixture in the top of double boiler, add cheese in small chunks, stirring until melted.
- Serve in a chafing dish with Fritos or tortillas.
- Serves 25 to 30.
