Ingredients

  • 1 1/2 lb. ground beef
  • 1 tsp. bacon fat
  • 1/4 c. flour
  • 1 1/2 onions, chopped
  • 1 1/2 tsp. powdered comino seed
  • 1 1/2 oz. chili powder
  • 1 tsp. oregano
  • 1 1/2 tsp. salt
  • bowl of Fritos or tortillas
  • 1 lb. Cheddar cheese

Method

  • Saute the meat in just enough fat to cover the bottom of the skillet.
  • When meat is browned, add the rest of the fat and the flour.
  • Add heated consomme, stirring.
  • Simmer for 30 minutes, stirring frequently.
  • Increase heat and stir continually until mixture thickens.
  • Place mixture in the top of double boiler, add cheese in small chunks, stirring until melted.
  • Serve in a chafing dish with Fritos or tortillas.
  • Serves 25 to 30.
