Ingredients
- 8 oz. mushrooms
- 1 clove garlic
- 2 c. broccoli, cut small
- 1 lb. bay scallops
- 1 can chicken broth
- 3 Tbsp. cornstarch
- 3 tsp. soy sauce
Method
- Add cornstarch to soup. Saute mushrooms in garlic in 2 tablespoons margarine.
- Add scallops.
- Cook 3 minutes. Add broccoli and cook 3 more minutes.
- Add soup and soy sauce.
- Bring to boil.
- Lower heat and cook two minutes, covered, or until broccoli is crisp cooked.
- Serve over rice.
