- 1/4 c. unsalted butter
- 4 c. sliced leeks
- salt and pepper
- 1 Tbsp. butter
- 2 c. whipping cream
- 3 large garlic cloves, minced
- 4 lb. Russet potatoes, peeled and thinly sliced
- 2 c. grated white Cheddar cheese (8 oz.)
- 1/3 c. freshly grated Parmesan cheese
Method
- Melt 1/4 cup butter in heavy skillet over medium heat.
- Add leeks and stir.
- Cover and cook until leeks are tender.
- Uncover and cook until almost all liquid is absorbed.
