Ingredients

  • 30 lb. sliced raw potatoes
  • 3 medium onions, chopped
  • 1 gal. water
  • 4 cans (50 oz.) mushroom soup or cream of chicken
  • 1/2 c. salt
  • 2 Tbsp. white pepper
  • 4 c. flour

Method

  • Arrange potato slices in 4 large metal baking pans.
  • Sprinkle each with salt and pepper, each layer.
  • Add chopped onion.
  • Pour a quart of water over each pan.
  • Cover and bake in 425° oven that has been preheated.
  • Turn oven to 375°; bake about 30 minutes.
  • Mix 1 cup flour with each can of soup; pour over each pan.
  • Bake uncovered for about 45 minutes or until done.
