Ingredients

  • 3 Tbsp. oleo or butter
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 1/2 c. milk
  • 6 c. (6) thinly sliced potatoes
  • 1 small onion (1/4 c.), chopped
  • 1 1/2 c. fully cooked ham
  • 1 Tbsp. oleo or butter

Method

  • Heat oven to 350°.
  • Grease 2-quart casserole.
  • Heat butter or oleo in 1 1/2-quart saucepan over low heat until melted.
  • Stir in flour, salt and pepper.
  • Cook over low heat, stirring constantly, until smooth and bubbly; remove from heat.
  • Stir in milk.
  • Heat to boiling, stirring constantly.
  • Boil and stir 1 minute.
  • Layer 1/3 of the potatoes, 1/2 of the onion and ham and 1/3 of the white sauce in casserole; repeat.
  • Top with remaining potatoes and white sauce.
  • Dot with 1 tablespoon oleo or butter.
  • Cover and bake 30 minutes.
  • Uncover and bake 60 to 70 minutes or until potatoes are tender.
  • Yields 6 servings.
