Ingredients
- 1 large eggplant, diced
- 1/2 c. chopped onion
- 3/4 c. croutons or dressing cubes
- 1 can cream of mushroom soup
- 1/3 c. milk
- 1 egg, slightly beaten
- grated American cheese
Method
- Cook eggplant in boiling water 6 to 7 minutes.
- Drain.
- Put eggplant, onion and croutons in baking dish.
- Mix soup, milk and egg; pour over eggplant.
- Sprinkle cheese on top.
- Bake 20 to 25 minutes at 350°.
- Makes 8 servings.
