Ingredients
- 2 eggs
- 2/3 c. milk
- 1/2 c. crushed saltines (approximately 12)
- 1/4 tsp. salt
- 1 (17 oz.) can creamed corn
- 2 Tbsp. cold margarine, cut in small pieces
- cherry tomato and parsley (optional)
Method
- Beat eggs until frothy.
- Stir in remaining ingredients, except garnish.
- Turn into greased 1-quart casserole dish.
- Bake in preheated 350° oven for 1 hour or until knife inserted into center comes out clean.
- Garnish with tomato and parsley.
