Ingredients

  • 24 medium mushrooms
  • 70 g savoury cheese biscuits
  • 2/3 cup toasted Sanitarium Pecans
  • 1/2 cup grated soy cheese (or low-fat cheese)
  • 1 1/2 tablespoons Sanitarium So Good soy drink
  • 1 tablespoon chopped parsley
  • 1 clove garlic, crushed

Method

1. Wash mushrooms and dry well with kitchen paper. Twist off stalks and peel off skin.

2. Place remaining ingredients in a food processor or blender and process until smooth.

3. Place filling into mushrooms and arrange mushrooms on a tray.

4. Just before serving, place mushrooms under a griller for a few minutes or until golden.

5. Serve as an entrée with a small salad. Allow two to three mushrooms per person depending on the size.
