Ingredients

  • 3 cups Flour
  • 1/4 cups Sugar
  • 4 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 6 Tablespoons Cold Butter, Cut Into Pieces
  • 1 cup Buttermilk
  • 5 dashes Hot Sauce, Such As Tapatio Or Cholula
  • 1 cup Grated Cheese, Such As Mexican Blend
  • 1 cup Chopped Meat, Such As Breakfast Sausage Or Ham
  • 1 whole Egg
  • 1 dash Sea Salt
  • 1 dash Freshly Ground Pepper

Method

  • Preheat your oven to 350°F. Combine the flour, sugar, baking powder, baking soda, and salt in a big bowl. Cut in cold butter with a fork or pasty cutter until mixture is a little crumbly. Add buttermilk, hot sauce, grated cheese and meat. Mix so it's just moistened. Turn this mixture out onto a lightly floured counter top and pat it into a big circle. You want it to be kind of thick as really thin scones are definitely not where it's at. When you have the dough in a circle, whisk up your egg with a fork and brush it over the dough. Sprinkle with a dash of sea salt and a dash of freshly ground pepper. Cut into big wedges, like pizza. Put in a baking pan (or onto a pizza stone, which is what I do) and bake for about 25 minutes or until they get a little brown on top. Serve with more hot sauce, or salsa, or whatever floats your boat.
  • Now, these scones are very versatile. You could use diced up breakfast sausage and grated Mexican blend cheese, diced up ham and grated Swiss cheese, chorizo and grated cojita. Bacon and cheddar. Whatever you like. It just needs diced meat and grated cheese!
