Ingredients

  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard
  • 1 cup cheddar cheese shredded
  • 1 cup butter or margarine, melted
  • 2 cups onion chopped
  • 3 tablespoons butter or margarinne
  • 1 cup mushrooms sliced
  • 1 cup egg noodles thin, cooked and drained
  • 2 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cheddar cheese shredded

Method

  • Preheat oven to 350F.
  • For pie shell: sift flour, salt and mustard into a medium bowl. Stir in cheddar cheese and melted butter. Mix thoroughly. Press evenly onto bottom and sides of a deep dish 9-inch pie plate.
  • For filling: over medium heat, saute onion in butter until soft, about 5 minutes. Add mushrooms and cook 5 minutes more. Remove from heat and combine with noodles. Spread over crust in pan.
  • In medium bowl, beat eggs. Add milk, salt and pepper. Pour over noodles. Sprinkle with remaining cheese.
  • Bake in preheated oven for 35 to 40 minutes, until custard is set. Remove from oven and cool 10 minutes before serving.
