Ingredients

  • 2 pound bay scallops
  • 1/4 pound butter, melted
  • 1 c. finely minced onions
  • 1/2 bunch parsley, finely minced
  • Juice of 2 lemons
  • 1 c. bread crumbs

Method

  • Saute/fry onions and parsley in butter.
  • Remove from heat.
  • Pat scallops in pan till all sides are full coated with butter.
  • Place in baking dish in one layer if possible.
  • Sprinkle lightly with salt and pepper.
  • Sprinkle with lemon juice, and then with crushed croutons or possibly buttered bread crumbs.
  • Bake 20 min on top shelf of 400 degree oven.
  • Serves 8.
