Ingredients

  • 1 lb. sausage
  • 3/4 c. chopped onion
  • 1/2 c. bell pepper, chopped
  • 1 c. mild Cheddar cheese
  • 1 c. Mozzarella cheese
  • 2 1/2 c. self-rising cornmeal
  • 1 1/2 c. milk
  • 1 egg
  • 1 c. whole kernel corn
  • 2 Tbsp. butter

Method

  • In skillet, brown sausage.
  • Drain off grease.
  • Melt butter in skillet with bell pepper, onion and corn.
  • Cook about 10 minutes. Add sausage; mix well.
  • In a large bowl, mix corn meal, egg and milk.
  • In another large skillet that has been preheated to about 450°, pour half of corn meal mixture, cheese and the other half of corn meal mixture.
  • Bake at 450° for 20 to 25 minutes.
