Ingredients

  • 1 lb. bulk sausage
  • 1 1/2 c. chopped celery (leaves included)
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 pkg. chicken soup mix
  • 1 can cream of mushroom soup
  • 3 1/2 c. boiling water
  • 1 c. uncooked rice

Method

  • Brown sausage in skillet.
  • Cook celery, onion and green pepper in 2 tablespoons sausage fat.
  • Combine soup with boiling water. Combine all ingredients in 2-quart casserole.
  • Cover.
  • Bake at 350°
  • for 45 minutes, stirring occasionally.
  • Uncover.
  • Bake 15 more minutes.
  • Makes 6 large servings.
