Ingredients

  • 1 lb. hot sausage
  • 4 1/2 c. water
  • 1 c. regular rice
  • 2/3 c. almonds (optional)
  • 2 pkg. chicken noodle dry soup mix
  • 1 1/2 c. chopped celery
  • 1 c. chopped green pepper
  • 1 medium onion, chopped

Method

  • Crumble sausage in skillet and brown.
  • In saucepan, bring water to a boil; add rice and soup mix.
  • Reduce heat and simmer for 20 minutes or until water is absorbed.
  • Add celery, onions and peppers to sausage.
  • Cook until tender.
  • Mix well.
  • Place in casserole dish and top with almonds.
  • Bake at 350° for 30 minutes.
