Ingredients

  • 1 lb. sausage (I like the lean, but any will do)
  • 1 c. chopped onion
  • 1 large can pork and beans (about 24 oz.)
  • 1/3 c. catsup
  • 1 Tbsp. prepared mustard
  • 1 tsp. poultry seasoning
  • 1 (8 oz.) pkg. cornbread mix

Method

  • Cook sausage in skillet, breaking up with a fork as it cooks. Saute onion with the sausage.
  • Drain all fat.
  • Combine beans, catsup, mustard, poultry seasoning with the sausage and onion.
  • Mix well.
  • Prepare corn muffin mix according to package directions. Put corn muffin mix into a greased 2-quart casserole dish, making a nest in the center.
  • Spoon meat mixture into nest.
  • When it's cooked, it makes a sort of crust around the other mixture.
  • Bake for 20 minutes in a 400° oven.
  • Garnish with parsley, tomato slices, catsup or whatever you like.
  • Recipe can be increased to suit your family size or for guests.
  • "We like it warmed over, too!"
