Ingredients

  • 14 oz breakfast sausage links
  • 1 None medium red onion, finely chopped
  • None None Cooking oil spray
  • 2 oz salami, cut into 1/2-inch pieces
  • 1 None medium red pepper, cut into 1/2-inch pieces
  • 8 None large eggs
  • 1/2 cup heavy cream
  • 1/2 cup coarsely grated cheddar cheese
  • 1/2 bunch flat-leaf parsley, chopped

Method

  • Preheat oven to 400°F. Lightly grease a 8-inch square ovenproof dish. Heat a large skillet over moderate heat. Cook and turn sausages for 4-5 mins or until cooked through. Drain on paper towels.
  • Spray onion with oil. Add to pan. Saute for 3 mins. Add salami and diced pepper; cook for 4 mins more or until vegetables soften. Transfer to a medium heatproof bowl; allow to cool.
  • Whisk eggs, cream, cheese and parsley in a large bowl. Stir into onion mixture. Pour into prepared dish. Top with sausages. Bake, uncovered, for 30-45 mins, or until mixture is set. To serve, cut frittata into slices.
