Ingredients

  • 1 lb. bulk pork sausage
  • 3 c. cooked rice
  • 2 c. shredded cheese, divided
  • 3 eggs, beaten
  • 1 can cream of mushroom soup, undiluted
  • 1/2 c. milk
  • 1 (4 oz.) can sliced mushrooms, drained
  • 1/4 tsp. onion powder

Method

  • Cook sausage in a skillet until brown, stirring to crumble. Drain; set aside.
  • Combine rice and 1 1/2 cups cheese.
  • Spread mixture into a greased 12 x 8 x 2-inch baking dish.
  • Sprinkle with sausage.
  • Combine eggs and next 4 ingredients; mix well.
  • Pour mixture over sausage.
  • Bake at 350° for 35 minutes.
  • Sprinkle with remaining cheese and bake an additional 5 minutes.
