Ingredients
- 4 lb. English cut or sirloin tip
- 1 large sliced onion
- 1 1/2 Tbsp. mixed pickling spices
- 3 Tbsp. honey
- 4 c. vinegar
- water to cover
- 16 gingersnaps
Method
- Marinate meat in vinegar, onions, honey and spices 4 hours or overnight.
- Brown meat and cook onions, salt and pepper; cover with marinade.
- Roast, covered, at 350° for 20 minutes per pound, plus 20 minutes.
- Thicken pan juices with gingersnaps.
