Ingredients

  • 1 lb. lean ground beef
  • 1/2 c. chopped onion
  • 1 c. sour cream
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1 (16 oz.) can whole kernel corn, drained
  • 1 (2 oz.) jar chopped pimiento
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 large tomato, thinly sliced (optional)
  • 1 (2.8 oz.) can French fried onions

Method

  • Microwave Directions:
  • Crumble ground beef into 2-quart casserole.
  • Add onion.
  • Microwave on High for 5 minutes, stirring once halfway through cooking time.
  • Drain and return to casserole dish.
  • Add sour cream, soup, corn, pimiento, salt and pepper. Cover and microwave 5 minutes on High.
  • Top with tomato slices. Microwave for 3 minutes on High or until tomatoes are slightly softened.
  • Garnish with French fried onions.
  • Let stand 3 minutes, uncovered.
  • (If tomato is not used, cook an additional 3 minutes on High before adding French fried onions.)
  • Makes 6 servings.
