Ingredients

  • 1 can enchilada sauce
  • 1 1/2 lb. grated cheese
  • 1 can olives, chopped (optional)
  • 1 onion, grated
  • 2 doz. corn tortillas
  • 1 1/2 lb. ground beef, browned

Method

  • Fry the corn tortillas on both sides to soften.
  • Drain and dip into enchilada sauce.
  • In the center of each tortilla place 2 tablespoons ground beef, some olives, onion, and cheese.
  • Roll up tortillas and fasten with a toothpick.
  • Add some cheese to the top of the enchiladas.
  • Place on a cookie sheet and bake for 10 to 15 minutes at 350°.
