Ingredients
- 1 can enchilada sauce
- 1 1/2 lb. grated cheese
- 1 can olives, chopped (optional)
- 1 onion, grated
- 2 doz. corn tortillas
- 1 1/2 lb. ground beef, browned
Method
- Fry the corn tortillas on both sides to soften.
- Drain and dip into enchilada sauce.
- In the center of each tortilla place 2 tablespoons ground beef, some olives, onion, and cheese.
- Roll up tortillas and fasten with a toothpick.
- Add some cheese to the top of the enchiladas.
- Place on a cookie sheet and bake for 10 to 15 minutes at 350°.
