Ingredients

  • 2 lb. lean ground beef
  • 2 1/2 c. low-sodium salsa
  • 1 1/2 c. quick cooking oatmeal
  • 2 carrots, shredded
  • 1 c. chopped mushrooms
  • 4 plum tomatoes, diced

Method

  • Preheat oven to 350°. Spray a loaf pan with cooking spray. In a large bowl, combine beef, salsa, oatmeal, carrots, tomatoes and mushrooms. Shape mixture into loaf. Place in loaf pan. Bake until browned and a knife inserted in the center comes out clean and hot, about 1 hour and 5 minutes. Let stand about 10 minutes before slicing.
