Ingredients
- 2 lb. lean ground beef
- 2 1/2 c. low-sodium salsa
- 1 1/2 c. quick cooking oatmeal
- 2 carrots, shredded
- 1 c. chopped mushrooms
- 4 plum tomatoes, diced
Method
- Preheat oven to 350°. Spray a loaf pan with cooking spray. In a large bowl, combine beef, salsa, oatmeal, carrots, tomatoes and mushrooms. Shape mixture into loaf. Place in loaf pan. Bake until browned and a knife inserted in the center comes out clean and hot, about 1 hour and 5 minutes. Let stand about 10 minutes before slicing.
