Ingredients

  • 1/2 c. butter
  • 2 eggs
  • 2 1/2 tsp. baking powder
  • 3/4 c. milk
  • 1 c. sugar
  • 2 1/2 c. flour
  • pinch of salt
  • 2 1/2 to 3 c. fruit (your choice: blueberries, drained pineapple, raspberries, etc.)
  • 1 tsp. vanilla

Method

  • Cream together the butter and sugar and add eggs, one at a time, beating well after each.
  • Sift together the flour, baking powder and
  • salt.
  • Add sifted mixture alternately with milk.
  • Fold in floured blueberries or other fruit and 1 teaspoon of vanilla. Bake in muffin tins at 400° for 25 minutes.
  • Yields 14 large muffins or 2 dozen small muffins.
