Ingredients
- 1/2 c. butter
- 2 eggs
- 2 1/2 tsp. baking powder
- 3/4 c. milk
- 1 c. sugar
- 2 1/2 c. flour
- pinch of salt
- 2 1/2 to 3 c. fruit (your choice: blueberries, drained pineapple, raspberries, etc.)
- 1 tsp. vanilla
Method
- Cream together the butter and sugar and add eggs, one at a time, beating well after each.
- Sift together the flour, baking powder and
- salt.
- Add sifted mixture alternately with milk.
- Fold in floured blueberries or other fruit and 1 teaspoon of vanilla. Bake in muffin tins at 400° for 25 minutes.
- Yields 14 large muffins or 2 dozen small muffins.
