Ingredients
- 15 medium-sized cucumbers
- 5 medium-sized onions
- 5 c. vinegar
- 2 tsp. celery seed
- 2 tsp. ground ginger
- 1/2 c. honey
- 1 tsp. turmeric
- 2 tsp. mustard seed
Method
- Thinly slice cucumbers and onions.
- Make a spiced vinegar, using vinegar, celery seed, ginger, honey, turmeric and mustard seed.
- Mix all ingredients.
- Let mixture come to boil in an enamel or stainless steel pan.
- Add cucumbers and onions and bring to boiling point.
- Pack cucumbers and onions in scalded pint jars. Then pour hot vinegar over them, leaving 1/4 inch headspace.
- Seal and process 10 minutes in boiling water bath.
- Yields 11 pints.
