Ingredients

  • 15 medium-sized cucumbers
  • 5 medium-sized onions
  • 5 c. vinegar
  • 2 tsp. celery seed
  • 2 tsp. ground ginger
  • 1/2 c. honey
  • 1 tsp. turmeric
  • 2 tsp. mustard seed

Method

  • Thinly slice cucumbers and onions.
  • Make a spiced vinegar, using vinegar, celery seed, ginger, honey, turmeric and mustard seed.
  • Mix all ingredients.
  • Let mixture come to boil in an enamel or stainless steel pan.
  • Add cucumbers and onions and bring to boiling point.
  • Pack cucumbers and onions in scalded pint jars. Then pour hot vinegar over them, leaving 1/4 inch headspace.
  • Seal and process 10 minutes in boiling water bath.
  • Yields 11 pints.
