Ingredients

  • 1 lb Salt Cod
  • 1 Red Pepper (seeded and chopped)
  • 1 onion (minced)
  • 1 clove garlic (crushed)
  • 1/4 cup parsley (chopped)
  • 3 tbsp olive oil
  • 5 cups cabbage (shredded)
  • 3 tomatoes (peeled, seeded and chopped)
  • 1/2 cup dry white wine
  • Pepper to taste

Method

  • Soak 1 lb of salt cod in cold water to cover, changing the water several times, for 24 hours and then drain the fish.
  • Remove any skin and bones, dry fish with a paper towel.
  • Cut into 2 inch pieces.
  • In a large skillet saute onion, red pepper, garlic and parsley in olive oil until the onion is softened.
  • Add cabbage, tomatoes, white wine, the cod and pepper.
  • Combine mixture and simmer it partially covered for 10-15 minutes or until the cabbage is tender and the cod flakes easily when tested with a fork. (Serves 4.)
