Ingredients
- 1 lb Salt Cod
- 1 Red Pepper (seeded and chopped)
- 1 onion (minced)
- 1 clove garlic (crushed)
- 1/4 cup parsley (chopped)
- 3 tbsp olive oil
- 5 cups cabbage (shredded)
- 3 tomatoes (peeled, seeded and chopped)
- 1/2 cup dry white wine
- Pepper to taste
Method
- Soak 1 lb of salt cod in cold water to cover, changing the water several times, for 24 hours and then drain the fish.
- Remove any skin and bones, dry fish with a paper towel.
- Cut into 2 inch pieces.
- In a large skillet saute onion, red pepper, garlic and parsley in olive oil until the onion is softened.
- Add cabbage, tomatoes, white wine, the cod and pepper.
- Combine mixture and simmer it partially covered for 10-15 minutes or until the cabbage is tender and the cod flakes easily when tested with a fork. (Serves 4.)
