Ingredients
- 1 small onion
- 1 small green pepper
- 2 to 5 jalapeno peppers
- 1 large can diced tomatoes
- 1 Tbsp. cilantro leaves
- 1/2 tsp. coarse black pepper
- 1/4 tsp. salt
- 1/4 c. parsley flakes
- 1 Tbsp. corn or vegetable oil
Method
- Chop onion, peppers and garlic in small pieces.
- Saute in oil for 5 minutes.
- Add tomatoes.
- Add remainder of ingredients. Simmer over low heat 20 to 30 minutes.
- Let cool.
- Serve with tortilla chips.
