Ingredients

  • 2 tsp orange zest
  • 1/3 cup orange juice
  • 1/2 cup honey
  • 1/2 cup tamarind concentrate, plus 1 tbsp
  • 1/2 cup Japanese soy sauce
  • 30 None chicken drumsticks
  • 1 1/4 lb baby bok choy, quartered
  • 2 None red peppers, thickly sliced
  • 9 oz fresh baby corn
  • 2 tsp sesame oil

Method

  • Combine orange zest, orange juice, honey, 1/2 cup tamarind concentrate and 1/4 cup soy sauce in a large bowl. Add chicken and turn to coat in marinade. Cover and refrigerate for 3 hours, or overnight.
  • Preheat a grill pan. Cook chicken, turning and brushing occasionally with marinade, for 30 mins, or until cooked through.
  • Meanwhile, oil a frying pan and place over medium-high heat. Cook bok choy, peppers and corn until tender. Transfer to a large serving bowl. Add sesame oil, remaining soy sauce and 1 tbsp tamarind concentrate and toss to combine. Serve with chicken.
