- 2 tsp orange zest
- 1/3 cup orange juice
- 1/2 cup honey
- 1/2 cup tamarind concentrate, plus 1 tbsp
- 1/2 cup Japanese soy sauce
- 30 None chicken drumsticks
- 1 1/4 lb baby bok choy, quartered
- 2 None red peppers, thickly sliced
- 9 oz fresh baby corn
- 2 tsp sesame oil
Method
- Combine orange zest, orange juice, honey, 1/2 cup tamarind concentrate and 1/4 cup soy sauce in a large bowl. Add chicken and turn to coat in marinade. Cover and refrigerate for 3 hours, or overnight.
- Preheat a grill pan. Cook chicken, turning and brushing occasionally with marinade, for 30 mins, or until cooked through.
- Meanwhile, oil a frying pan and place over medium-high heat. Cook bok choy, peppers and corn until tender. Transfer to a large serving bowl. Add sesame oil, remaining soy sauce and 1 tbsp tamarind concentrate and toss to combine. Serve with chicken.
