Ingredients
- 4 Boneless, skinless chicken breasts.
- 1 16 oz jar salsa (mild, med or hot, your choice)
- 2c white rice, cooked separately
- 1tsp olive oil
- 3/4 c water
Method
- In a a large skillet, add olive oil. Add chicken breasts. Sear both sides to brown slightly. Add salsa, distributing to each of the chicken breasts. Add water to the skillet, surrounding the chicken breasts.
- Cover and let cook for approx 20 mins, or until moisture evaporated. Serve over white rice.
