Ingredients
- 1 1/2 lb. peppers (1/2 lb. Anaheim, 1/2 lb. Hungarian wax, 1/2 lb. jalapeno)
- 6 large onions
- 20 to 24 large tomatoes
- fresh garlic to taste
- 1 tsp. basil
- 1 tsp. oregano
- 1 tsp. cilantro
- 2 c. vinegar
Method
- Blanch tomatoes and remove cores and skins.
- Quarter. Coarsely chop peppers and onions.
- Combine all ingredients.
- Cook 1 1/2 hours.
- Process in hot water bath.
- Pint jars, 10 to 12 minutes.
