Ingredients

  • For the rub:
  • 1/4 cup finely ground dark roast coffee
  • 1/4 cup dark chili powder
  • 1/4 cup smoked paprika
  • 1/4 cup kosher salt
  • 1/3 cup packed dark brown sugar
  • 1.5 tablespoons sugar
  • 1 tablespoon garlic powder
  • 1/2 tablespoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • For the brisket:
  • 6-7 pound beef brisket

Method

  • Mix ingredients in bowl to make rub.
  • Pat brisket dry with paper towel.
  • Massage rub into brisket.
  • Cover with plastic wrap and refrigerate for 2 hours.
  • Prepare grill at 225 degrees. Place brisket, fat side up, in center of grill. Use smoking wood as you wish. Cook for 1 hour per pound. After cooking prescribed length, insert a meat thermometer into thickest part of brisket. It should read 185 degrees. Remove meat, let rest for 30 minutes. Carve.
