Ingredients

  • 6 skewers
  • 1 # Salmon filet
  • yellow peppers
  • red peppers
  • red onion
  • 6 mushrooms
  • Marinate:
  • one lemon juiced
  • one lime juiced
  • cilantro, roughly chopped
  • olive oil
  • 1 tsp sugar
  • 2 cloves garlic crushed

Method

  • Soak skewers in warm water 1 hour. Prepare marinate with all ingredients. Cut salmon into 1" cubes. Cut peppers and onion into 1" squares. Alternate vegetables and salmon on the skewers. End with a blanched mushroom cap. Marinate for 1 hour. Grill on a medium high grill for 5 minutes.
