Ingredients
- 1 (16 oz.) can red salmon, drained, deboned and flaked
- 1/2 c. milk
- 2 c. soft bread crumbs
- 2 eggs, beaten
- 1 Tbsp. grated onion
- 2 Tbsp. minced fresh parsley
- 1 Tbsp. fresh lemon juice
- 1/4 tsp. salt
- dash of pepper
Method
- Heat oven to 375°.
- Mix salmon, milk, bread crumbs and eggs. Add onion, parsley, lemon juice, salt and pepper.
- Mix well, but do not overmix.
- Place into greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
- Bake 40 to 45 minutes.
- Prepare Dill Sauce (recipe follows).
