Ingredients

  • 2 c. milk, scalded
  • 1 c. rice (1/2 c. cooked and drained)
  • 2 Tbsp. grated onion
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. sugar
  • 2 Tbsp. lemon juice
  • 3 Tbsp. chopped parsley
  • 3 eggs
  • 1 large can salmon, drained
  • 1/2 c. melted butter

Method

  • Combine milk, rice, onion, salt, pepper, sugar, lemon juice, salmon and parsley.
  • Mix well.
  • Beat eggs well and add to mixture. Pour into buttered casserole or oblong cake pan.
  • Bake at 250° for 35 minutes or until firm and brown on top.
  • Pour melted butter on top.
  • Serve hot or cold.
