Ingredients
- 2 c. milk, scalded
- 1 c. rice (1/2 c. cooked and drained)
- 2 Tbsp. grated onion
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. sugar
- 2 Tbsp. lemon juice
- 3 Tbsp. chopped parsley
- 3 eggs
- 1 large can salmon, drained
- 1/2 c. melted butter
Method
- Combine milk, rice, onion, salt, pepper, sugar, lemon juice, salmon and parsley.
- Mix well.
- Beat eggs well and add to mixture. Pour into buttered casserole or oblong cake pan.
- Bake at 250° for 35 minutes or until firm and brown on top.
- Pour melted butter on top.
- Serve hot or cold.
