Ingredients

  • 1 8 oz. pkg. cream cheese softened and cut into cubes
  • 1 16 oz. can crushed pineapple with juice
  • 2 6 oz. jars apricot baby food
  • 1 6 oz. pkg. apricot flavored gelatin
  • 2 c. water
  • 2/3 c. sugar
  • 1 12 oz. carton frozen, non dairy whipped topping
  • Nuts

Method

  • Combine cream cheese, pineapple and baby food in blender container.
  • Blend on high for 30 seconds; set aside. Place gelatin, water and sugar in saucepan.
  • Bring to a boil over a high heat. Add cream cheese mixture. Stir until well blended and allow to cool.
  • Fold whipped topping into mixture.
  • Pour into 13 x 9 x 2 inch pan.
  • Top with whipped topping.

  • chopped nuts. Refrigerate.
