Ingredients

  • 1 1/4 lb. mixed salad bar vegetables (7 c.)
  • 1/2 lb. sweet Italian sausage
  • 1 clove garlic, chopped
  • 2 Tbsp. olive oil
  • 1 (8 oz.) can tomato sauce
  • 1 (10 3/4 oz.) can condensed beef broth
  • 3 soup cans water
  • 1 (19 oz.) can undrained white kidney (cannellini) beans
  • 1/2 tsp. oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 c. orzo or other small pasta

Method

  • Slice any large vegetable into bite size pieces.
  • Saute sausage and garlic in oil in a large pot until meat is no longer pink.
  • Drain most of oil.
  • Add vegetables.
  • Saute 2 to 5 minutes until vegetables begin to brown.
  • Stir in tomato sauce, broth, water, beans and seasonings.
  • Simmer, uncovered, 15 minutes. Sprinkle pasta over soup; simmer 15 minutes or until pasta is tender.
