Ingredients

  • 2 c. milk
  • 1/2 c. sugar (4 Tbsp. honey, 2 Tbsp. sugar)
  • 1/2 c. light molasses
  • 2 Tbsp. salt
  • 5 Tbsp. oleo
  • cornmeal
  • 1 egg white, mixed with 3 Tbsp. water (to brush tops of loaves)
  • 1 1/2 c. warm water
  • 2 pkg. yeast
  • 2 Tbsp. caraway seed
  • 5 c. rye flour
  • 5 c. white flour (approximately)

Method

  • Scald milk; add sugar, molasses and oleo.
  • Cool to lukewarm. Measure warm water into large bowl and sprinkle in yeast.
  • Stir until dissolved.
  • Add lukewarm milk mixture.
  • Add caraway seed and rye flour; beat well.
  • Add enough white flour to make dough. Knead about 7 minutes.
  • Put in greased bowl and let rise until double.
