Ingredients
- 6 oz. pkg. chocolate chips
- 3 Tbsp. white corn syrup
- 1/2 c. rum
- 2 1/2 c. finely crushed vanilla wafer crumbs
- 1/2 c. powdered sugar
- 1 c. finely chopped pecans
Method
- Melt chocolate chips in double boiler over hot water.
- Add corn syrup and rum.
- Combine crushed vanilla wafer crumbs, powdered sugar and chopped pecans.
- Add to the chocolate mix and mix well.
- Cover and let stand for 30 minutes.
- Make 1-inch balls. Roll in granulated sugar.
- Place in tight container to "ripen" for 3 to 4 days.
- Be sure to keep tightly covered.
