Ingredients
- red (new) potatoes
- olive oil
- rosemary (fresh)
Method
- Wash potatoes and either half or quarter them.
- In a 9 x 13-inch pan, pour in olive oil to cover bottom of pan (about 1/8-inch). Roll potatoes in oil.
- Strip the leaves off the rosemary and sprinkle on top of the potatoes.
- Heat oven to 400° and roast until golden brown, stirring occasionally, 30 to 45 minutes.
- Salt and pepper to taste.
