Ingredients
- 6 lb. boneless beef roast
- 6 slender carrots
- 4 medium potatoes
- 1 celery stick
- 1 large onion
- black pepper as desired
Method
- Leave carrots whole.
- Cut potatoes in fourths lengthwise. Chop celery and onion fine.
- Starting at one end of meat, place a layer of carrots and a layer of potatoes.
- Repeat.
- Put chopped celery and onion on last.
- Sprinkle half the salt on top of vegetables.
- Form meat roll.
- Tie or pin with toothpicks. Sprinkle other half of salt on outside of meat roll.
- Brown meat in a very hot oven, then add a quart of hot water.
- Cover and bake at 250° for 3 hours.
