Ingredients

  • 6 lb. boneless beef roast
  • 6 slender carrots
  • 4 medium potatoes
  • 1 celery stick
  • 1 large onion
  • black pepper as desired

Method

  • Leave carrots whole.
  • Cut potatoes in fourths lengthwise. Chop celery and onion fine.
  • Starting at one end of meat, place a layer of carrots and a layer of potatoes.
  • Repeat.
  • Put chopped celery and onion on last.
  • Sprinkle half the salt on top of vegetables.
  • Form meat roll.
  • Tie or pin with toothpicks. Sprinkle other half of salt on outside of meat roll.
  • Brown meat in a very hot oven, then add a quart of hot water.
  • Cover and bake at 250° for 3 hours.
