Ingredients

  • 1/4 c. melted butter
  • 1/4 c. lemon juice
  • 1/4 tsp. white pepper
  • 1/8 tsp. paprika
  • 1/2 c. cooked rice
  • 1/2 c. shredded Cheddar cheese
  • 1/4 lb. broccoli, steamed and chopped
  • 1 1/2 lb. flounder
  • lemon wedges (for garnish)

Method

  • In a small bowl, combine butter, lemon juice, pepper and paprika; set aside.
  • In a larger bowl, mix rice, cheese, broccoli and 2 tablespoons of lemon butter.
  • On a large sheet of wax paper, lay fillets flat.
  • Divide rice stuffing equally and place on wide end of fillet.
  • Roll up; place, seam side down, in shallow baking pan coated with lemon butter.
  • Pour rest of sauce over fish.
  • Bake at 375° for 20 minutes.
