Ingredients
- 1/4 c. melted butter
- 1/4 c. lemon juice
- 1/4 tsp. white pepper
- 1/8 tsp. paprika
- 1/2 c. cooked rice
- 1/2 c. shredded Cheddar cheese
- 1/4 lb. broccoli, steamed and chopped
- 1 1/2 lb. flounder
- lemon wedges (for garnish)
Method
- In a small bowl, combine butter, lemon juice, pepper and paprika; set aside.
- In a larger bowl, mix rice, cheese, broccoli and 2 tablespoons of lemon butter.
- On a large sheet of wax paper, lay fillets flat.
- Divide rice stuffing equally and place on wide end of fillet.
- Roll up; place, seam side down, in shallow baking pan coated with lemon butter.
- Pour rest of sauce over fish.
- Bake at 375° for 20 minutes.
