- 1/2 c. finely chopped mushrooms (fresh or canned)
- 2 Tbsp. butter or margarine
- 2 Tbsp. all-purpose flour
- 1/2 c. light cream
- 1/4 tsp. salt
- 1/4 tsp. cayenne pepper
- 1 1/4 c. shredded sharp Cheddar cheese
- 8 deboned, skinned whole chicken breasts
- 2 slightly beaten eggs
- 3/4 c. fine dry bread crumbs
Method
- Cheese Filling:
- Cook mushrooms in butter for 5 minutes. Blend in flour; stir in cream.
- Add salt and pepper; cook and stir until mixture becomes very thick.
- Stir in cheese; cook over very low heat, stirring constantly, until cheese is melted.
- Turn mixture onto pie plate; cover and chill overnight.
