Ingredients

  • 1/2 c. finely chopped mushrooms (fresh or canned)
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. all-purpose flour
  • 1/2 c. light cream
  • 1/4 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1 1/4 c. shredded sharp Cheddar cheese
  • 8 deboned, skinned whole chicken breasts
  • 2 slightly beaten eggs
  • 3/4 c. fine dry bread crumbs

Method

  • Cheese Filling:
  • Cook mushrooms in butter for 5 minutes. Blend in flour; stir in cream.
  • Add salt and pepper; cook and stir until mixture becomes very thick.
  • Stir in cheese; cook over very low heat, stirring constantly, until cheese is melted.
  • Turn mixture onto pie plate; cover and chill overnight.
