Ingredients

  • 3 c. water
  • 1 tsp. salt
  • 1 c. wild rice
  • 1/2 c. butter
  • 2 Tbsp. finely chopped onions
  • 3 tsp. salt
  • 1/2 c. sliced, cooked mushrooms
  • 1/2 c. American Blue cheese (about 3 oz.)
  • 6 Rock Cornish game hens
  • 1/3 c. butter, melted

Method

  • Bring water to a boil.
  • Wash rice several times and add to boiling water.
  • Cover and simmer for 1 hour without stirring until tender; drain if necessary.
  • Melt 1/2 cup butter.
  • Saute onions and mushrooms in melted butter until lightly browned.
  • Toss lightly with wild rice and American cheese.
  • Rinse hens with water and pat dry.
  • Rub cavity with salt.
  • Fill lightly with wild rice mixture.
  • To close cavity, sew or skewer and lace with cord.
  • Tie legs together.
  • Brush with 1/3 cup melted butter.
  • Roast, uncovered, at 350° for 1 hour or until done.
  • Serves 6.
