Ingredients

  • 2 lb small red potatoes
  • 6-8 ea. garlic cloves, peeled and finely chopped
  • 2 teaspoon olive oil
  • 1/2cup fresh mine, minced and stems removed
  • 1/2 teaspoon kosher salt or sea salt
  • Pepper to taste.

Method

  • Scrub potatoes and halve or quarter large size, leave bite size intact.
  • Combine all ingredients in a large bowl or large ziplock bag and stir or shake well to coat all the potatoes
  • Place in a shallow, oiled or oven papered roasting pan. Do not recommend using foil or other pan coatings.
  • Roast for 1 hours.
  • Stir occasionally to avoid sticking.
  • Taste to adjust seasonings when done.
  • Can be served hot or at room temperature, depending on your individual taste.
