Ingredients
- 2 lb small red potatoes
- 6-8 ea. garlic cloves, peeled and finely chopped
- 2 teaspoon olive oil
- 1/2cup fresh mine, minced and stems removed
- 1/2 teaspoon kosher salt or sea salt
- Pepper to taste.
Method
- Scrub potatoes and halve or quarter large size, leave bite size intact.
- Combine all ingredients in a large bowl or large ziplock bag and stir or shake well to coat all the potatoes
- Place in a shallow, oiled or oven papered roasting pan. Do not recommend using foil or other pan coatings.
- Roast for 1 hours.
- Stir occasionally to avoid sticking.
- Taste to adjust seasonings when done.
- Can be served hot or at room temperature, depending on your individual taste.
