Ingredients

  • 6 Fresh Roma Tomatoes cut in half
  • 2 Yellowneck Squash cut up
  • 2 Zucchini squash cut up
  • 1 small onion cut round
  • 1 red pepper cut in half
  • 1 lb lightly steamed fresh green bean (keep warm)
  • 2 TBSP chopped fresh basil
  • 2 TBSP olive oil
  • 1 TBSP chopped fresh garlic
  • 1 TSP garlic salt
  • 1/2 Tsp black pepper

Method

  • Toss tomatoes, squash, red pepper and onion with 1 TBSP of olive oil and roast on grill until tender and slighly charred. Chopped all vegetables keeping any juice from this especially the tomatoes. Toss roasted vegetables and any juice with steamed green beans, basil, garlic, galic salt, pepper and the remainder of the olive oil. Salt to taste and serve warm.
