Ingredients

  • 5 large tomatoes, cut into eighths
  • 3 T. olive oil
  • 2 T. minced garlic
  • 3/4 t. salt
  • 3/4 t. pepper
  • 1 1/2 lb. medium shrimp
  • 1/2 cup chopped parsley
  • 2 T. lemon juice
  • 1 C. feta cheese, crumbled

Method

  • Preheat oven to 450 degrees. Place the tomatoes in a large baking dish. Spoon the olive oil and garlic over the tomatoes. Sprinkle with the salt and pepper and toss. Place on top rack of oven and roast for 20 minutes. Remove from oven and stir in shrimp, parsley and lemon juice. Sprinkle with the feta. Place in oven for another 10-15 minutes. Serve warm with bread and salad.
