Ingredients

  • 12 lbs whole turkey
  • 2 cups salt
  • 2 tablespoons rosemary
  • 2 tablespoons italian seasoning
  • 2 tablespoons cinnamon-sugar mixture
  • 12 tablespoon garlic salt
  • 12 tablespoon pepper

Method

  • Thaw turkey.
  • 24 hours in advance to cooking clean out &brine turkey.
  • Fill large bucket or pan with enough water to cover turkey.
  • Mix in 2 cups of salt and add turkey.
  • Soak overnight (approx.
  • 24 hrs).
  • Rinse turkey throughly, inside and out.
  • Preheat oven to 400.
  • Place turkey in roasting pan with 3 cups of water.
  • Mix in small cup; all seasonings, smash up rosemary as well as possible and sprinkle mixed seasons all over the turkey.
  • Stuff turkey if you wish at this point --
  • Cover and place in oven until throughly cooked (approx.
  • 4 hours).
  • Remove cover for last hour to brown and crisp.
  • Baste turkey with pan juices every 30 - 45 minutes.
