Ingredients

  • 1 large leek (white and pale green parts only)
  • 1 lb. center cut boneless pork loin
  • 1 Tbsp. plus 1 tsp. chopped fresh parsley leaves
  • 1 tsp. unsalted butter or olive oil
  • 1/2 lb. fresh shiitake mushrooms, stems discarded and caps cut into 1/2-inch slices
  • 1/2 tsp. salt
  • 1/2 c. dry red wine
  • 1/2 c. beef broth

Method

  • Cut leek crosswise into 1/2-inch slices and in a bowl, soak in water to cover, agitating occasionally to dislodge any sand, 5 minutes.
  • Lift leek out of water and drain in a colander.
