Ingredients

  • 1/2 c. butter or margarine
  • 1/2 c. Ricotta cheese
  • 1 tsp. vanilla
  • 1 c. sugar
  • 1 egg
  • 2 c. sifted all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Method

  • Preheat oven to 350°.
  • Soften butter.
  • Blend with Ricotta until creamy.
  • Add vanilla and mix well.
  • Add sugar gradually, beating until well blended.
  • Add egg and mix well.
  • Slowly stir in dry ingredients and blend well.
  • Drop from a teaspoon onto lightly greased cookie sheet.
  • Bake 10 minutes.
  • Yields 30 to 36 cookies.
