Ingredients
- 1/2 c. butter or margarine
- 1/2 c. Ricotta cheese
- 1 tsp. vanilla
- 1 c. sugar
- 1 egg
- 2 c. sifted all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
Method
- Preheat oven to 350°.
- Soften butter.
- Blend with Ricotta until creamy.
- Add vanilla and mix well.
- Add sugar gradually, beating until well blended.
- Add egg and mix well.
- Slowly stir in dry ingredients and blend well.
- Drop from a teaspoon onto lightly greased cookie sheet.
- Bake 10 minutes.
- Yields 30 to 36 cookies.
