Ingredients
- 2 c. fresh spinach
- 1 small onion, chopped
- 1/2 to 1 c. parsley
- 2 c. rice
- 2 c. College Inn chicken broth
- butter or oil
- grated cheese to taste
- salt and pepper
Method
- Mix oil, onion and spinach. Cook over low heat for 5 minutes. Add rice and parsley.
- Stir to coat.
- Add chicken broth. Cover and cook with rice until tender.
- Add grated cheese, salt and pepper before fully cooked.
- Add more broth, if needed.
